I just bumped into an excellent example of digitizing documents with a digital camera. The picture links you to Phil_G's Flickr page where he has posted all his mom's receipies.
For normal purposes it's enough to take a 1600x1200 pixel picture of a letter/A4 sized document. That allows you to read even the smaller text. (I just hope that the Carl Zeiss objective of Nokia N-series phones is good enough to allow this type of digitizing.)
Also, the archiving solutions of digital pictures have luckily become easy and cheap enough for everybody latest with Google's Picasa.
